Chef Troy Jorge, Executive Chef at The Bellevue Chicago

Meet Troy Jorge, The Bellevue Chicago’s New Executive Chef

The Bellevue is pleased to welcome Troy Jorge as Executive Chef, bringing more than two decades of experience in some of Boston and Chicago’s most acclaimed kitchens to the heart of the Gold Coast.

Chef Jorge’s career spans Michelin-starred tasting menus, modern steakhouses and contemporary American restaurants, giving him a culinary perspective that pairs fine-dining technique with bold, recognizable flavors. At The Bellevue, he’ll bring that experience to a menu designed to feel polished and elevated while still fitting the lively, social atmosphere of the restaurant.

From Boston to Chicago

A native of New Bedford, Massachusetts, Jorge first discovered an interest in cooking during a junior high school home economics class. After graduating from culinary school in 2001, he began his professional career at The Ritz-Carlton Boston before joining Clio, acclaimed chef Ken Oringer’s celebrated restaurant.

He later spent several years with Columbus Hospitality Group, working at The Federalist and Ostra under award-winning chef Jamie Mammano before becoming Chef de Cuisine at Mooo, the group’s modern steakhouse.

In 2015, Jorge made the move to Chicago with a specific goal: to work at Grace, chef Curtis Duffy’s acclaimed three-Michelin-star restaurant. He joined the kitchen in 2016 and spent nearly two years honing his craft there before becoming Sous Chef at Ryan McCaskey’s two-Michelin-star Acadia.

Leading a Michelin-Starred Kitchen

In 2019, Jorge was named Executive Chef of Temporis in Chicago’s West Town neighborhood. During his tenure, the intimate tasting-menu restaurant held and retained its one-Michelin-star rating until its closure in 2024.

At Temporis, Jorge developed tasting menus inspired by seasonality, color, contrast and layers of flavor. His dishes paired the technical precision expected of fine dining with thoughtful presentation and an emphasis on making each course as enjoyable to eat as it was visually engaging.

Following Temporis, Jorge joined Acanto Restaurant + Wine Bar as Executive Chef in 2024. The move allowed him to bring his fine-dining background to an approachable à la carte setting on Michigan Avenue, experience that now helps shape his approach at The Bellevue.

A New Chapter at The Bellevue

At The Bellevue, Jorge brings together more than 20 years spent across very different styles of restaurants.

His approach centers on quality ingredients, precise execution and flavors that guests recognize and want to return to. Rather than fine dining for fine dining’s sake, Jorge is focused on creating dishes that feel sophisticated without becoming overly complicated.

It’s a natural fit for The Bellevue, where an elevated dining experience meets the energy of Chicago’s Gold Coast.

We look forward to welcoming guests to experience Chef Troy Jorge’s culinary vision at The Bellevue.
